What is Jerk Cooking?

At its most basic, jerk essentially is the Jamaican way of barbecuing.

Along with various hot peppers, one of the key ingredients in jerk seasoning is allspice, a berry from the West Indian pimento tree that seems to have the flavors of several spices, particularly cinnamon and cloves.  It is also sometimes called the Jamaica pepper but is not nearly as hot as others used to make jerk.
